The name of your craft beer is inspired by the Madrilenian monument of Cibeles Goddess, goddess of mother earth. Why did you think that Madrid deserved its own beer honoring its most representative monument?
The fact of not having a beer in Madrid for the locals motivated me to do it from a sentimental point of view. 90% of the beer is water and there were no brewers in Madrid with Spanish capital that produced beer in Madrid. That’s why I thought about making a brewery produced in Madrid with water from Canal de Isabel II, which is of a high quality, with a name of Madrid. La Cibeles has historically been a nerve centre of Madrid and, moreover, it is a source of water, so … what better than the symbol of La Cibeles for my beer?
Why it is important for you that your beer ingredients are locally sourced?
We try to be as local as possible or coming from places as close as possible, like Europe. We support the new national malt and hops producers, all our beers use Leon hops and have a percentage of national malt. We understand that in that also lies the value of La Cibeles, generating new businesses and markets within the world of beer.
Your latest creation has been the 7 Craft Beer, designed in collaboration with the 7 Islas Hotel. What inspired you to create it?
A hotel is a resting place and where many emotions are shared; On one hand, it is a place where you dream and you are with your subconscious and on the other hand it is a place where you go with your partner and jump stars … it is as well a place for meetings and business. That’s why it has to be a beer with many faces, a beer for all ages, just like a hotel, where there is a confluence of ages, cultures, people, countries, ways of thinking and living.
The 7 Islas Hotel is located in the Malasaña neighborhood … What does this neighborhood have that inspires a Malasaña beer?
Malasaña is part of the history of Madrid, it’s life. It is a central neighborhood where you have the life of Madrid day and night. It is a working class neighborhood of people who get up every day to work and earn their bread. It is a very picturesque and bohemian neighborhood, it is spectacular to see its roofs from above. Beer would be something without shrillness, without dyes or preservatives, something natural and easy to drink, but with personality.
