What inspired you to start macerating?
What we are at a start point, to build an identity from our own tradition and character. In Spain, almost every Comunidad Autónoma makes its own brewing, and that’s what I began doing. We are new people doing it the old-fashioned way to improve people’s lives, from the heart.
What is the value of traditional handcraft?
The good feeling of dealing with nature, working from affection and in a human scale. Handcrafts imply something personal, something created with the hands, far from the factory. This begins here and now and when you are making something that fills you, you generate good vibes.
Tell us about the materials used for the extracting process.
99% of our mashing come from 100 km far, for the ecological footprint. Sustainability is a responsibility, both with the planet and society. Most producers working with us also drop by to enjoy their produce!
What got you inspired to create the mashing specially dedicated to 7 Islas Hotel?
In the Canary Islands, hometown for the hotel. In its flavours, its calmed rhythm (which we should be inspired by), its subtropical weather… hence it is a gin based mashing with coriander, lime and jalapeño, with a spicy touch. You must try it.
